When we converted to plesk, we ended up using custom scripts to do most of the work. Plesk has a number of simple shell scripts that ease the process.
One future note: The upgrades really, really suck. Their migration tools are horrible, take a very long time, and don't work as expected. Our 7.1 to 7.5 migration was extremely painful.
In our system, if the domain is example.com, then they use ns1.example.com and ns2.example.com as the authoritive nameservers, so we could move them one by one. In your system, you will have to leave the DNS on your old system, and change the records to point at the new servers until the migration is complete, then move the 'ns1.domain.com' and 'ns2.domain.com' records to the new server.
