Cat 3 vs Cat5 vs Cat5e Cat6?

I need to find out the PHYSICAL difference between Cat3 and Cat5 cables.

This is my knowledge so far..

Cat3 was developed in the early 80's and superceded coaxial cable due to its low cost and easy installation.
It's maximum throughput is 10MBps.

Cat5 became popular around 2000 and allows up to 100MBps throughput. Cat5 and Cat5e have no difference except for some sort of certification.
Cat 5 cable is also twisted and Cat3 is not.

I guess my main question is what is the physical difference between the two and how do I determine what jack and what cable I have?
