QoS on Shoretel Phones connected to a Cisco 3750

I'm in the process of installing cisco 3750 poe switches at the access layer in an environment that uses Shoretel IP phones. Unfortunately I haven't had much luck getting information regarding QoS properties on the phones themselves. I'm currently testing with a model 530 and have the following interface configuration.

switchport mode access
switchport voice vlan 2
srr-queue bandwidth share 10 10 60 20
srr-queue bandwidth shape 10 0 0 0
mls qos trust device cisco-phone
mls qos trust cos
spanning-tree portfast

The phone gets an address on vlan 2 and connects to the shoretel call manager and is able to place calls but I'm not sure qos is being handled correctly.

When I do a "show mls qos int f2/0/39 statistics" on that interface I see all of the incoming packets are in cos 1-4.

I may be wrong but even if the phone is using dscp values it should at least map to a cos value of 5 assuming shoretel transmits voip packets at 41 or higher.

Anyone know for sure how the phone marks the tos bit in a Ip header?

P.S. We use a Cisco VoIP solution but thru a recent aquisition must now support a Shoretel system.

Bonus question :) Anyone found good documentation on establishing a SIP trunk between Cisco 4.1.3 CM and a Shoretel Call manager? I haven't and I've been looking for quite some time.
