I want to take my old cat 5 patch panel and terminate the ends to a new patch 5e patch panel Is this doable and will I see a performance gain in my network bandwidth?

If I have gigbit switches and cat 5in the walls terminated to new Cat5e patchpannel then run cat5e to the switches from the patchpanel would I see a performance upgrade or is it still as slow as its weakest link which would be the cat5 in the walls?
It's doubtful you'd see any performance increase and frankly, I've seen issues with Cat5 connections attempting to run at Gigabit speeds (like an inability to auto-negotiate a link speed). You MIGHT be able to get away with Cat5 patch panel and cables... but almost certainly not if your in-wall cables are Cat5. Those become your longest runs and they'd be dominated by Cat5, not the new Cat5e patch panel or patch cables.

If you're just replacing the patch panel and not the cables then no, you won't see any performance increase.
