Managed Network Infrastructure setup

Hi Folks,
My network consists of  85 XP workstations, 14 W2K3 servers and a pile of unmanaged switches. It is one, unsegmented subnet (192.168.55.X).
In order to seperate our various departments into individual subnets, I am planning on buying a bunch of managed switches. I'm also doing this to take advantage of the network information that is available from the managed switches. I'm thinkning that I'd like to use MAC-address-aware VLAN management to assign the various PC's the the appropriate VLANs.
So what I don't know is what a typical setup for this type of network is. Should I have all of our finance department in one subnet,, our engineering in another, sales in another? Where should the servers go,,, in their own subnet?
Can someone please give me an idea of what the defacto standard is for settting up a network of this size in a "managed" format?
