Office network running very slow sometimes, not all the time.

My network is running very slow at certain times and not others (slow downs can last all day, or just 4 hours at a time). I am very new to diagnosing network problems, and my network is complex (at least to me). Please let me know where to start, which book  to read or program to download, so I can get a picture of what is going on with the network find out how to fix it. Here is some basic information, if you need more, please let me know. Thanks, TJK.

Main Office:
5 servers - win 2003 stndrd edition on all. They are connected to 4 managed dell gigabit switches
2 servers have gig network cards, 3 others are 10/100
main building has cat5e running to the switches - about 50 users
2 cisco airnet wirless routers are also connected to the switches
dedicated T1 for internet going into instagate firewall, then into switch.

Processes servers are running:
terminal service, dns, active directory, exchange 2003 stndrd, print server, file server, symantec antivirus 11, symantec internet security, BES, domain controller, SQL, mysql, internal website, MAS accounting software written in provideX, roaming profiles, etc.

Remote Locations: (on same network, across the street)
3 remote locations connnected by cisco airnet 1400 wireless routers - about 25 users each remote location. remote location buildings running cat 5e.
10/100 main switches at remote locations, connected to the airnet router and user computers.

workstation notes:
all win xp pro sp2 - motherboard is similar to intel D915GUX with 10/100 NIC

Network notes:
I have a lot of generic (compaq\whatever brand) 5 port hubs to connect printers to the network in every location.
