How to secure my network ?

Hello gurus,
I have a customer who has the following layout.
3 servers 1 email 2 SQL 3 FileServer
and around 50 PC and 15 Handheld and 7 notebooks

3 Hot Spots WIFI in the Warehouses so that the handhelds are connected.
He wants his network to be secure from the outside and inside world.
so I am suggesting to get a hardware firewall like fortinet F80 .
but that would secure from the outside to the inside.
what about the inside ?
who can I secure the internal network ?
with wifi and notebooks ....
who to make sure that nobody just plugs in a notebook and tries to hack my network
or flood it with worms/viruses ?
I need your help guys.
my client is very paranoid and needs max security.
and I need max help from your experiences as to how to make the setup.
please help me . any documentation would be great !
forgot ! Windows 2003 but moving to 2008 .
the email server is mdaemon.
SQL is SQL 2005
