Why is my SMTP mail routing through one server, when I've changed the CNAME in DNS to point to another server.

I have a Windows 2000 server running Exchange 5.5.  The only process it is still running as is our internal SMTP mail server.  i.e. various programs such as backupexec is set to send us reports using this as the SMTP server.  I want to move all this over to a Windows 2003 server running Exchange 2003.

The 5.5 machine is server1 and 2003 machine is server2.

If I test SMTP mail I can send through either server1.{domainname}.com or server2.{domainname}.com

We have a DNS entry which was set CNAME mail.{domainname}.com to server1.{domainname}.com.
I changed teh CNAME to point to server2.{domainname}.com but the mail is still being routed through server1.

I've rebooted both server1 and server2, as well as the 2 servers which house our DNS.Start Free Trial
