Postfix not relaying mail to relayhost as specified

How can I tell if postfix is actually attempting to relay mail as specified in the main.cf file?
When looking the  maillog it /var/log/ I don't see any thing mentioned.  Does it actually show up
there?

What ever I put for the mail host, the log files displays relay=none.
The emails time out.
