Multiple Subnets, One Gateway, Two DHCP Servers

Can I set up multiple subnets in a network with one gateway?  I also need to set up a second Dhcp server for fault tolerance.

Ex.  192.168.1.0 and 192.168.2.0 on one server
192.168.3.0 and 192.168.4.0 on second dhcp server

Multiple Cisco Switches
Windows Server 2003
XP and Mac OSX clients....all dhcp
