thanks for the quick and partially helpfull reply. It is really usefull to know the "binding" option which would be very sensible to work.
However I have setup the binding to point only on the 10 subnet but it keeps selecting the 192 subnet. I have disabled the 192 subnet and DHCP server picked up the 10 net straight away.Then renabled the 192 and DHCP points to this again. I have also restarted the DHCP server service even the server itself but still the same problem.
Any other suggestions maybe?

Have you tried checking the 'Bindings...' under the Advanced tab?
You can specify which NIC card to bind the DHCP server to in that. (Right Click on your DHCP Server -> Properties). Snapshot attached
