I have upgraded from a shared hosting environment to virtual private server and moved websiteX over to the vps. I have available to me a control panel where I can manage the mail and dns settings.
Our company server grabs the emails from 'the sky' and distributes them to the correct inbox. Would the mail settings change at all because of the move to new hosting (it is the same company just a different hosting package)? Would we lose any emails during the period of the move?
Also, we have a .co.uk as the main website but also have a .com. Whenever anyone uses the .com I wish it to always resolve to the .co.uk i.e. never actually show or run under .com (because when someone signs in under the .co.uk and then goes to a .com link of the same website, the page loading under .com does not recognize the visitor as being authenticated).

Most likely your email will be unaffected since it sounds like it is managed on a josted server that is not directly related to your webserver.
As far as the .co.uk vs .com issue, do you control the DNS entries for these domains?
You could deal with this by setting up a site for the .com site that does nothing other than redirect clients to the .co.uk site.
