DNS not my area, so need to understand at a higher level what you've suggested noci;
>> A * (for any RR) should match all not otherwise named entities.
I've checked the forward lookup zone for our domain - no A* record is listed.
I'm not sure what you mean by 'RR'
>> Just add a * name the the zone with the right RR (A, CNAME...) dont let it have a too long a TTL (3600
>> or so is good enough). otherwise you cache might keep names for too long, or you have to wait up

Not sure how this answers my original question. Why are redirects currently going to opendns (67.215.65.132), where can I find this setting?

A * (for any RR) should match all not otherwise named entities.
Just add a * name the the zone with the right RR (A, CNAME...) dont let it have a too long a TTL (3600 or so is good enough). otherwise you cache might keep names for too long, or you have to wait up to TTL expiration on the name to realy use it....
If you want to keep this as a backup of loggod out systems or so, then you need a shorter TTL...
