This phone should work with asterisk also you could trry with cme i.e.buy a 1751 voice router and connect that to your asterisk box using sip.

I recently aquired some Cp521 cisco handsets. I am trying to configure them for use with an asterisk box. From what I can find, this is not possible and basically of no use to me

Yes they are SCCP only and designed to work with their own phone system only.
Even if you installed SCCP support in Asterisk there is a good chance they wont work and I have not heard of anyone trying them.
