sorry are u using virtual interface to connect to the vpn server, if yes then you need to change the netwotk inteface for the softphone to use the virtual interface not the physical.

VPN seems to work fine, as I can Ping one address of the NEC VOIP Server 192.168.0.10. However, when I lauch the NEC SP30 Softphone, it fails to connect to the server, and gives an error message that it "registration with the server failed". Also, I cannot Ping the other address of the NEC VOIP Server, 192.168.0.11. Has anyone made this combination of parts work to establish an SP30 Softphone connection, to an NEC VOIP Server?

ok it looks like the phone is not using the correct port to connect to the server .
a great free tool to troubleshoot this issue is http://www.microsoft.com/t
install the software and run ,then run the nec softphone .
from the tcpview check the establish connections to the vpn server also check what ports is using to connect , if e.g port 4000 you need to allow that port/protocol on the firewall.
let me know if this works if not i will try somethink else.
