I know how to check the call history information on her phone itself, is there a way I can print something out from the switch?

Just a quick troubleshooting thought, do not use port 1752 what is the response, if challenged then you know that at least you are reaching the system. Then try connecting with port "8435" if fails then you know port 1752 is open and your connection is good. If still not receiving information then I would say it is turned off globally. If you receive garbled data then it could be a format/settings issue with the baud rate, parity and such.

There are a few resources that may help. If this is something you will be looking at on a regular basis, look for call accounting software, the few hundred bucks for a package will save you time and produce some useful reports.

Are you using some form of Call Accounting software? What you need is the SMDR from the system? Do yo have the manual around?
The SMDR is the entire log of all calls the system is making (usually is a raw format ASCII based), so the call accounting programs take the raw data, parse it and make reportable. But if you are savy with Excel you can whip up something in an hour to do that for you for at least some basic information.
