setting up QoS in cisco enviroment

Hi, i need to set up the Qos in our company lan. Actually we are using AAstra Matra voip wired and wifi telephones. I think that i need to implement QoS in our lan because with wired phones we have no problems, but with WIFI with SIP protocol, we have lot of problems, bad voice, disconnection jiitter etc. etc. .
My main problem is that i have no idea on how setup qos!!! I have no idea about DSCP and finally, i'm not sure that cisco qos will work with NO CISCO phones. I surfed in internet, i found tons of cisco documentation, other manufacters specs and instructions, but seems to me that CISCO is the worst one (concerning the setting up difficulties). Can some one give me some tip? Some getting start info?
Our company is fully cisco based, the main core is a catalyst 6513 (IOS (tm) c6sup2_rp Software (c6sup2_rp-PSV-M), Version 12.1(27b)E4, RELEASE SOFTWARE (fc3)); the others switches are 2960,2950 and one 3750 (i'm attaching a brief inventory with softwares releases), and i would like to know if our current software releases, and hardware tipology, is fully Qos compatibile.
