In that example...you enter "007" as the pin number when prompted then "#",... then after the beep you enter the 4 digit extension of the person you want to spy on.

Apart from 555 which gives me random extensions to listen to, is it possible to add another number we can dial that will only listen to a certain extension? Need this for training purposes.

That is a pretty good read if you are going to be modifying your elastix or freepbx config.
I'm not familiar with elastix, just Asterisk in general....
However,....after skimming through that...it seems you can add custom contexts through the web interface, and edit your extensions_custom.conf file to add a barge feature.
The custom module would have to have been loaded with elastix.
Might look something like this...
