NetBUEI is slightly faster, next is IPX/SPX, last is TCP/IP.
TCP/IP's main feature is its "robustness", the ability to go through multiple routes, not its speed. Though IPV6 is suppose to fix that.
For peer to peer, I'd stick with NetBUEI.
On the other hand, as meverest stated, you won't be able to notice the difference unless you severely stress the network, and you will likely to notice bad network card, slow hubs, and such before you notice protocol efficiency.

you really only need one protocol, and since most people want some kind of internet connectivity, TCP/IP become defacto default.
as far as speed goes, i doubt if you will ever be able to tell without running specifivc diagnostics - the network infrastructure is more important than protocols. i beleive ipx/spx is fairly hardy and efficient, but once again, you are virtually stuck with IP if you want to do internet stuff.
