I want to run some proxy server (like cc proxy or free proxy or so) to have incoming connections from LAN1 going through the other LAN (LAN2) to connect to the internet. How can I setup the proxy so that it accepts clients from LAN1 but it doesn't route to internet though LAN1 but only LAN2 ?

LAN 1 and LAN2 should be on different subnets. Then make sure LAN2 has a default gateway, but LAN1 doesn't. Install your proxy software and away you go
