Let me see if im undertanding this correctly. For this to work i need to configure the vmnet and the ip settings on the virtual machine as:
vmnet 1
IP address: 192.168.1.x
Sunbet mask: 255.255.255.0
DG:192.168.1.1
DNS: 192.168.1.1
vmnet 5
IP address: 192.168.2.x
Sunbet mask: 255.255.255.0
DG:192.168.2.1
DNS: 192.168.2.1
Virtual machine (windows server 2003 as router wth 2 lan conections)
Lan 1 (connected to vmnet1)
IP address: 192.168.1.1
Sunbet mask: 255.255.255.0
DG:
DNS:
Lan 2 (connected to vmnet5)
IP address: 192.168.2.1
Sunbet mask: 255.255.255.0
DG:
DNS:

You can configure the networks using the Virtual Network Editor and then associated and ip to the vmnet interface like any real interface.
Your virtual machine can take any ip in the network you choose, you gonna use as default gateway the ip you set in previous step for the vmnet interface and for DNS as soon as routing is working you can use the sames as the real machine.
Just be careful with internet access, if you using a router you may need to create static routes to your virtual lans pointing to your real machine external ip.
