Sure. It's pretty simple.
You would create VLAN's on your existing switched network VLAN111.
Then, you would trunk the port that AP is connected to. Give the native vlan whatever vlan the management address is on.
Then, enable VLAN's on the AP1100. Create a SSID called guest, and assign the VLAN111 to that SSID.

I haven't done this specifically with a Cisco AP, but have done it with 3Com APs and Cisco switches, but the theory should be the same and you are on the right track.
Create your second SSID, assign it a VLAN value and trunk the AP to the switch. You would configure the new VLAN appropritely, including a IP Helper address and set the appropriate routes in your router. Hope this helps.
