Even with 10.8 - and with 10.9 - you do *NOT* need to setup IMAP on the Exchange server.
Mail in OS X leverages Microsoft's EWS, so keep that in mind when managing things server-side.

I have successfully used Apple Mail in 10.8 and 10.9 to make a client connection to an Exchange 2007 server.
Overall, Outlook for Mac might be a better option for you, but you STILL need to know the correct parameters on the Mac if you don't have auto discovery setup correctly, and even then it's not flawless (better to set up the account manually than hope that Autodiscovery will get you the desired result, simplify matters by ensuring you set up the correct parameters in the client).

For the account, add an Exchange type account. For the username, use just the short name before the @ symbol, i.e.: do not use DOMAIN\username.
I recommend that you DE-select "Use autodiscover service."
In the Advanced tab, make sure both internal and external ports are set to use SSL.
The path should be: EWS/Exchange.asmx

Best of luck.
