How to troubleshoot a slow linux VPS (Centos 5.2) for a linux relative-noob

I'm a self-employed web developer - my principle job is to design and build websites in Coldfusion / PHP / Javascript / HTML. I've messed around with linux for about 3 years now learning how to use the command line, installing packages and generally exploring in the hope that it can be a cheaper solution to Microsoft. I know that sometimes things need to be built from source and compiled but that's a whole mysterious area that I don't have time to explore.  I don't really know any real programming languages like C, C++ or Java but I've dabbled a bit so they're not completely alien to me either.

For the past 18 months I've run a Centos 5.2 VPS that hosts some of the sites I've built for my clients and is a source of extra income because I can charge them a monthly hosting fee. However I'm not yet hosting enough sites that I can afford to pay a professional linux administrator to manage the system - so I manage it myself with the occasional help and advice from the hosting company (Vivotech) who are great. When I say I manage it - well, I think I do, but to be honest I'm not sure I do a very good job. That's what this post is about.

I've noticed that the VPS slows down when serving web pages - pages that should load in a couple of seconds often take 10 or even 20 seconds to load. I often put this down to the fact that I'm sitting here in Prague (Czech Republic) and the server is located in Seattle on the other side of the planet. Performance is noticeably faster in the morning here while America sleeps.

Recently I noticed that if I re-boot the VPS then performance always improves massively (pages loading in 2 or 3 seconds again) and this increased performance usually lasts for a while but will gradually slow down again over a period of a few days. Now I'm not sure what steps I need to take to trouble shoot this. I don't want to have to reboot my server every few days. How can I begin to locate the issue? and more generally, can anyone recommend any reading (I prefer books if possible) for someone like me who isn't a total beginner but isn't an expert either.
