Which Linux OS for Solid Raid only

Hi All,
I am attempting to build my own raid server but I want it to run on Linux. The card I have chosen is http://www.adaptec.com/en-US/products/raid/sata2/AAR-2820SA/index.htm
I intend to mount the drives and card etc in a server chasis and set up raid 6 with 8 x 1tb drives.
Whay is the best Linux OS to use but bare in mind i'm a newbie to linux. All I need is raid support and for mac / pc users to be able to access shares etc when it's setup.
Is there a bootable linux software that would act as a raid manager only without the rest of the Linux OS ?
Will linux see all of the 6TB usuable space ? The raid will be done at hardware level on the card
