I am actually, about to answer my own question (but I will still give you the solution, xema). The problem was in my permissions. I am a normal user, so I do not have access to write to windows partitions. so basically I changed my /dev/sda1 line in my fstab file to look like this:
/dev/sda1 /mnt/usb auto rw,dmask=0000,fmask=0111 0 0
This allowed all my users on my computer access to this mount point when it is connected. This then allowed Amarok to see the partition, and access all the music on my ipod. Thanks for the links though.
