We have a couple of weighing machines on our robotic line which weight bags of Mushy Peas - the data is squirted straight from the machines (Ramsey ECW950) to a standard Dot Matrix Printer - think they are Epson LQ type.
We currently have the printers sat on top of the machines, with a cable about 1.5 metres - I want to put these printers in an office about 40 feet away - is there a way to convert parallel to ethernet or another way to extend the range of a parallel cable? - If they were going via a pc I would just put a print server in but not sure I can do what i need.

Sorry long time since I worked with thngs like this. Seem to remember the spec for parallel cable is max 12 feeet. (also min 12 feet for RF interference reasons but everyone ignores that). Should still be able to get parallel to rs232/rs432 serial converters to extend range. Try www.lindy.co.uk seem to carry good range of such gear, though I have no personal experience with them. Also Black Box company used to do such gear, but no recent dealings with them either.
