Backup a RAID 5 Linux machine

A RH 7.3 working on RAID 5 has to add one more HD, the vendor needs to
destroy the raid set and rebuild it, I want to make a backup before doing it
and restore the system after the RAID is configured again

How to do the backup? can I do it by ftp all the file to another PC, then
I reinstall the Linux and ftp the file back?
