what binary files can cat & split work for?

Hi,

Recently I have found out that some binary files, like mp3, can be merged using the cat (or split using the split) command. This makes me wonder to what extent these commands work... I tried some pdf files and this didn't work. So, would anybody tell me what files these command work and do not work for, in principle?
