When I hook it to an XP machine I don't have full access to all folders. How do I change the security on the drive so it can be hooked to any computer and work as an external drive?

Right click the folder on that drive and select the security tab, then change the ownership so your are the owner of those folders. Now you should be able to change the security settings for the standard groups etc. If you are using XP home you will need to boot into safe mode and login to the administrator account to get the security tab.
