Ive set the user up on our domain with email that works, yesterday i bought a domain name then added the domain to our exchange in the receipt policies with the help from this guide

Is the domain name being hosted? Do you have an MX record directing mail from the host to your own network?
You will either need an MX record to be created so whoever is hosting your domain can direct email to your server or you will need to use a pop3 service to download the mail to your server.
