DHCP and dual NIC

I have a 2003 Server with two NIC's - one is wireless and the other is CAT5. I would like to use this server as a router and DHCP server, but I only want DHCP to run on the CAT5 NIC. The problem is every time I enable the 2nd NIC the DHCP services stop.

The desired config:
<SERVER1 - Wireless LAN NIC [192.168.0.5] > ----> to Firewall / Internet
<SERVER1-  CAT5 NIC [192.168.10.1] > ---> DHCP server to 192.168.10.x LAN.

Basically the 192.168.10.x subnet is my test lab w/ 8 clients, and I need them to use SERVER1 to get to the Internet.
