it is a piece of software that you can install on a computer and then use it to emulate several computers at once for testing purposes or for consolidation purposes. Mind you, it takes a pretty hefty machine to really do a good job hosting other OS's using this.
MS uses VPC in the classroom to emulate a complete environment for each student. Virtual Server is more suited for a server OS.

Virtual Server 2005 = Microsoft's version of VMWare.

Basically it allows you to run most operating systems in a virtual environment on your main machine. You would install it, create a virtual machine and load it just as you would load a brand new computer (ie. boot to CD and load from scratch). Virtual Server can run most x86 operating systems.
We use it here for some engineers who have a software program that doesn't play well with others. We load it up on a virtual session and they run the program from within that session.
