Everyone morning this week that my staff came in the mapped drives were inaccessible. Either they got access denied or the cannot restore error message.
When i remap the folder on a different drive all of their documents are read-only.
please help, what could be causing this.

I agree with zephyr. Most likely has to do with share / NTFS permissions. By default on 2K3, a newly created shared folder has read only for share permissions.
That doesn't explain why your shared drives / folders went wild, but that would be a good start to take a look at those permissions...

On Friday we left the office and everything was fine, and then Monday morning no one able to access their mapped drives. As a test I gave everyone full control on both permissions/security and nothing.
I unchecked read only, applied it, it applied the new attributes but the documents are still read-only
okay, i think i found the problem. i change the password policy to change every 30 days whereas before it was the same password forever. well the 30 day was on monday, and everyone changed there password on the domain only. well the thing is that everyone works on their pc locally, and only access the server via the mapped drives. so does the login for the machine locally and the server has to be the same, in order to access the mapped drives?

have you checked the share permissions / security?
are the files actually set to read only, or is it only read only for the users via the network map?
my first inclination is that something happened to the share permissions/security... so i would start there.
