How to partition the server?

Zones: Windows 2003 Server, Exchange Email Server, Active Directory

I have a new HP proLiant DL320s Server with 300 G hard disk. In fact, it's a 2 X 160 GB SATA-II 300, 7200 rpm X 3 ea configured for Raid-5, and with a hot spare drive (160 GB SATA-II 300, 7200rpm X 1 each for hot spare)

The question is how can i partition the disk, can i make C partition with 30 GB and D partion 270GB.

Which kind or partion is the best for me? I am using this server as a mail server. The partion will not change after i set it up.
