The most efficient way of making sure Windows Updates effectively deployed to Server 2003 environments

Hi,
I have been given the task of managing our server Update environment for windows Security update.

Currently we have not patched our servers for at least 3 months, and in some cases manaully update them accordingly.

I will need help or any thoughts of what things to consider when devising a Plan for Security updates, the frequency of updates, how to test updates prior to deployment. Pretty much I am creating a Server environment Patch Management policy from scratch.

We are using a WSUS server for our desktop environment ONLY and I was considering how to implement it to include servers as well, however I am not clear on the effects of using WSUS for our Server environment.
