setup web server as email server

Hi all,

my company has recent purchashed a dedicated web server from 1and1. we are sucssfully hostinng all of our sites on it however we are still using 1and1's email server. we would like some help on setting our web server up as an email server.

current config:
windows 2003
IIS (V6 i think)
coldfusion 8 servs the web apps

we have purchased a new domain name espcially for this purpose because we host multipul sites we didnt want any reference to the other domains in the header details of the emails.

what we have done so far:

1, created a subdomain called mail.thedoamin.com
2, pointed the main domain's MX records to mail.thedoamin.com
3, pointed mail.thedomain.com to our web server

this is where you guys come in. whats next?
