How to break a windows and exchange cluster to a single host

I need to reconfigure a Windows/Exchange 2003 2 node cluster to work as a single host because I would like to virtualize this server using VMWare Infrastrucuture 3.
How should i accomplish this reconfiguration?
Is it possible to break the cluster with minimum downtime?
