You can host as many sites on your IIS server as you want. And you are correct, just copy the content from the other site and put it in another folder for the new site.

Changing domain names usually shouldn't affect the actual hosting of your site one bit unless you are using SSL. The dns records for each domain name simply need to point to the IP address that is currently being used on the site.
In the case that you need to support SSL in both domains, you would need a certificate for each domain name. You can then duplicate the site you currently have set up in IIS ("save configuration to file" and then create a "new web site from file") so both sites point to the same source code. Then just update the certificate on the new site to use the one for the new domain name and you're good to go.
