I tried the Net Time /setsntp:<server> but it looses it after some patches and things.
I know that group policy should be do this, but which of the three do I enable. I also read that by default servers point to the DC's for time. I don't believe thats true.

It would really interest me why so many people are trying to configure something manually that, in almost all cases, has already been configured and is working fine by default.
Time is a crucial point in AD, so there's a sync hierarchy in place used by any OS running W2k or later when it's a domain member:
DCs will sync with the PDC emulator, members will sync with the DC authenticating them.
The only machine in your network that needs to be configured manually is the PDC emulator. Follow the instructions here (you can use http://www.pool.ntp.org/ to find a time server near you):
Synchronize the Time Server for the Domain Controller with an External Source

You can not use "net time /querysntp" to find out which time server a domain member is using. A domain member will use the domain sync hierarchy and will ignore a manually configured time server. "net time" is deprecated and should not be used anymore.
