I have a user with about 4 different email accounts, they now want to change their default email but it keeps reverting to the original one.
This is how I have been doing it:
open user in ad
change email address in general tab
select new primary email and click set as primary
apply & ok

That should work but you need to uncheck the box that says "automatically update addresses based on recipient policy"
The recipient policy will be changing it back.
