Depending on the hardware you are installing on, the whole process from start to finish takes between 6 and eight hours. SBS is the largest single install of a Microsoft product aside of EBS.
1. Install Windows Server 2003 and answer some setup questions for the active directory install. (45-60m)
2. Reboot, install active directory, IIS, Sharepoint, prep for exchange. (45-60m)
3. Reboot, install exchange 2003 (60-90m)
4. Reboot. Depending on version you will be done or able to install SQL Server and ISA Server (45-60m)
5. Reboot.
Think back and remember. Best advice. What did you do? Did you join the workstations to the domain? Did you apply Windows Updates and service packs? How fast was their internet connection (this will affect how long it takes the updates to be applied. Did you sit with the user and help them log in and prepare to work for the first time under the domain? How old/new was the machine? A server with a RAID 10 of 15K RPM drives will install windows and other components a LOT faster than a system of 7.2K RPM SATA drives in a RAID 1. Did you setup VSS? How about Sharepoint? HOW MUCH of a setup did you do? Did you review RWW? That's what I mean - THINK BACK and REMEMBER. And next time, you'll remember to document everything (I'm horrible at billing - and I'll have to do essentially the same thing for an install I did 3 months ago too... so I'm not just saying this to be annoying...).
What you're asking for isn't really possible to say. Everyone can contribute ideas... but the actual time depends on your skills and what you did... and there's a LOT of things you COULD have done but may not have necessarily done.
Install SBS 2003. Transfer data from existing servers/workstations and set up shares on server with customer required permissions. Create users and security groups and assign permissions to users and groups. Transfer mail from existing accounts. Set up company public contacts and calendars if needed. Set up server to send and receive mail including configuring MX and reverse DNS records with internet provider. Set up router port forwarding allowing email, Remote Web Workplace and Outlook Web Access. Configure exchange spam filtering. Set up network printers. Configure fax server. Install antivirus and configure for server and workstations. Join all workstations to domain and configure for user including setting up email, faxing and printing. Configure backup and review strategy with backup administrator. Configure monitoring and reporting and follow up on issues for designated period of time. Review operation with management and review support policies.
