Well, there are 15 fields in that record. I dont want to get alerts if some other field changes.

You are absolutely correct. Actually I do not think there is an out of the box way of monitoring if a field changes. What you might be able to do is develop your own SharePoint activity (if you wanted to continue using SPD work flows) and create this functionality yourself.
Another option would be to develop an event receiver that sent the email when a field value changed.
You might be able to get creative and create another field, or list that stores the value of the field every time you update the list. Then in your SPD work flow you could have a step that retrieves that value from the other list and compares it to the new value. If they are different send the email and then update the secondary list with the new value.
