Only thing I can think of will audit everything in a Site Collection. I don't know of a way to do this for individual sites or document libraries.
In your website's homepage, navigate to "Site Actions>Site Settings>Modify all site settings"
Under "Site Collection Administration", click on "Site Collection Audit Settings"
With a series of check marks select what you want audited, then use the "Audit log reports" under "Site Collection Administration" to view your audit reports.
Try it out and see if this is what you need.
