SharePoint 2007 - How do I integrate our smtp server into the farm?

Our farm has 2 WFE servers, an index server and an app server.

Our internet domain is xyz.com and our primary smtp server is smtp.xyz.com.

Our sharepoint outbound email service points to smtp.xyz.com

The  problem I have is with INBOUND email.

I inherited this system and I dont quite understand why my predecessor configured it the way they did&

The SMTP server they configured for inbound email is one of the Web Front End Servers, WFE1.xyz.com.  Theyve created a domain alias on the SMTP service of WFE1.xyz.com and set the Incoming Mail Display Address to @xyz.com

I have enabled the creation of SharePoint distribution groups and we also attach email addresses to certain sharepoint libraries.

Heres my problem:

Email addresses attached to libraries are created as AD Contacts with the alias USER@WFE.XYZ.COM

Emails sent from inside our organization to this address work fine  but we cannot send emails to this address from outside the organization.

Conversely, when SharePoint creates an email distribution group for a SharePoint group, it creates it as GROUPNAME@XYZ.COM in Active Directory and can be reached from both inside and outside the organization.  It gets a little confusing because the email for the group which is displayed at the top of the group page is displayed as GROUPNAME@XYZTEAM.COM  so say someone wants to email the group by clicking on the link within sharepoint, the incorrect address is populated in their mail client.

So in a nutshell, what I want to do is streamline inbound email within our farm so that both distribution groups and contacts created by SharePoint in the specified OU are either CONTACT@XYZ.COM OR GROUP@XYZ.COM and can be reached from inside or outside the domain.

Ive changed the inbound mail server to smtp.xyz.com and changing the display address to xyz.com.

I also stopped the Inbound Mail service on the WFE1.xyz.com server.

But now I cant work out how to attach the Inbound email service to smtp.xyz.com.  

Would I need to use the physical computer name for smtp.xyz.com and install MOSS on it?
