Is it possible to set the following permissions on a list in MOSS 2007:
- users/group can add items
- users/group cannot delete items
- users/group can modify only their own items

Yes, you will use a combination of custom permission levels to lock deletion (looking Site Settings/ Advanced Permissions) and the Edit access option of the list itself (list settings/ advanced settings).
I would recommend starting with the contribute permission and making a copy then removing the delete option. You will find this in the advanced permissions settings for your site.

Yes, it's possible.
First, for the edit only their own items part... go to the list, settings > list settings > advanced settings > edit only their own items
Second, for the add items, but not delete you'll need to create a custom permission level. Go to the top level of your site: Team Site > Site Settings > Permissions > Permission Levels > Edit Permission Level
Click on the contribute permission level, click to copy the permission level. Name your new level something that you will remember and add a description. Uncheck the box for "delete items". Now assign your users in this list the new permission level
