Under the hood, SP takes each response and creates a separate item for it. The 'subject' display form filters away the responses for the root item. So getting the last posting author will require that you traverse the list (of responses) to the last item and extract the author from this last item.
It's not an OOB option (unlike the 'last updated' field). You'll need to do a bit of coding to make this happen.
