Server hard drive remove for backup

We have a Dell PowerEdge 1800 server with Windows server 2003 standard and Microsoft SQL 2005 and our business program and files/records on it. I am always concerned about backups. Mostly in the event of a total drive failure. It is setup as a Raid 5 with 2 SCSI hard drives. I am wondering would it work to get another drive like one of SCSI drives and pull one of the current drives to be used as a complete off sight system backup. Than put the new drive in the server. It should rebuild into a backup drive - correct? We do a number of backups now to tape and also to a external drive but I am still concerned about a total restore and amount of time that would take. Is this a poor idea to do this?
