Move users and shares from SBS server to winserver2003

Hi,
We are going to migrate from our small business server to a very big network with many users.
There will be a person sent out fro WHQ to migrate AD and Exchange to the IT dep in London.
Before that we need to move all other local resourses from our Small Business server to a Windows server 2003. We just got a brand new one.
There are whitepapers at Microsoft on how to move user shared folder by using xcopy command. I have done that many times whel Dells c-partition has gone out of space, but I have never moved them out to anotther server, just to other drives.
So my plan is to setup the win2003server as a fileserver connected to the sbs-domain, but how is the best way to move away the files from the sbs-server to the fileserver and keep pathes arond the office?  
Is it just to create a shared area on the new server, map it up on the sbs with a letter and use the same whitepaper?
