My first suggestion is not to try on do this on a beer budget.
If you choose to migrate to VMWare, there are some critical things(I.M.O) you will need; share storage, RAM(lots), and at least two ESX hosts. Why two ESX hosts? VMWare's best practice uses the formula n+1. What this means is that for every ESX server you have, you should always add one additional server for redundnacy.
Next how much money(approx$) do you have/want to spend?
How many servers do you want to virtualize?
How much RAM are your current servers utilizing?
What are your current server specs?
